
Alfajores
Ingredients(Serves 4):
- One can condensed milk
- ½ cup corn flour
- ½ cup all-purpose flour
- ⅛ cup milk
- 5 tbsp margarine
- ⅓ cup sugar
- 3 tbsp icing sugar, for dusting
- ½ tsp baking powder
- ½ tsp vanilla essence
- Salt to taste
Method
- Prepare Dulce de Leche by boiling unopened condensed milk can in a deep pan filled with water for three hours. Ensure tin is completely immersed else it will burst. Remove tin and cool it.
- Mix milk, margarine, sugar and vanilla essence. Whip until creamy.
- Add both flours, salt and baking powder. Mix well. Add margarine mixture and mix to form dough.
- Transfer it to a cling wrap. Cover tightly. Refrigerate for one hour.
- Preheat the oven to 175°C. Roll the dough between two parchment papers. Bake cookies for twelve minutes until golden brown.
- Spread 1 tsp Dulce de Leche over a cookie. Top it with another cookie.
- Dust with icing sugar and serve.
